Tropical Type Cheese The Tropical Cheese is similar to Parmesan Cheese, in aspect and taste. It differs in maturation time; whereas the mandatory maturation period required by the supervisory body for Parmesan is 6 months, the Tropical type requires 15 days. Typical of the northern region of the state of Minas Gerais, the Tropical Cheese has the following sensory characteristics: • Consistency: medium to hard; • Texture: closed, brittle and grainy; • Color: yellowish-white; • Flavor: Slightly Spicy; • Odor: Characteristic; • Crust: Irregular; • Shape: cylindrical or rectangular (blocks) • Weight: 4 to 10 kg.
